- 580 g flour
- 100 g granulated sugar
- 5 g fine sea salt
- 85 g butter
- 230 g lukewarm whole milk
- 7 g instant yeast
- 2 eggs
- 1 egg yolk
- 240 g brown sugar
- 17 g cinnamon
- 84 g butter
Vanilla Bean Cream Cheese Glaze
- 115 g cream cheese
- 90 g icing sugar
- 1 vanilla bean
- 45 ml whole milk
Add to the bowl of a stand mixer the flour, sugar and sea salt. Whisk it until it`s all incorporated. Pour in your unsalted softened butter. Blend it in by using two forks. Add in another bowl your lukewarm milk and the instant yeast.
Pop your flour mixture onto the stand mixer and begin mixing on medium low. Slowly add the milk and yeast combination as well as two whole eggs and one egg yolk to the flour mixture. When the dough is smooth, slowly add your butter keep mixing for 5-7 minutes.
Once your dough is smooth put it on a lightly floured work surface and knead until for one to two minutes. Put your dough in a greased bowl and cover it with a damp towel or plastic wrap.
Let it rest for 2 hours or until doubled in size.
Preheat your oven to 195 degrees
Mix your brown sugar with the cinnamon in a separate bowl.
When the dough has doubled in size pour it on a lightly floured work surface and roll out until it is 0,5 cm thick.
Spread the softened butter onto your dough with your hands or a spoon.
When the butter is spread evenly, generously cover the dough with the sugar/cinnamon mixture.
Roll up the dough from the long side down. Cut 5cm wide segments out of your roll.
Grease the baking dish and line the bottom of your pan with your cinnamon rolls (it's good when they touch). Cover the dish with plastic wrap and let rise at room temperature for 45-60 minutes.
Bake the cinnamon rolls for 15-18 minutes or until nice and golden brown.
Let them completely cool down.
Whip the cream cheese on a high speed of your electric mixer. Blend in powdered sugar and the milk. Add the seeds of the vanilla bean and mix well together.
Pour you glaze over the buns and enjoy your homemade cinnamon buns.
